Chunky Black Bean Salsa
3 tomatoes, seeded and chopped
1 15oz can black beans, rinsed and drained
1 jalapeño pepper, seeded and chopped
1/2 small sweet onion, chopped
1/4 cup chopped fresh cilantro
1/2 tsp grated lime rind
3 tbs fresh lime juice
1/2 tsp salt
1/2 tsp ground pepper
baked tortilla chips
Combine first 9 ingredients in a bowl. Cover and chill until ready
to serve. Serve with baked tortilla chips.
