Cornbread - A Measured Recipe

Break 1 egg into a bowl. Add 1 tablespoon oil. Beat well. Add 1 cup buttermilk. Add 1 cup cornmeal, 1 teaspoon baking powder, 1/2 teaspoon salt, 1/2 teaspoon baking soda. Stir to moisten. Pour 1 tablespoon oil into small skillet and heat to smoking. Pour in batter.

Bake at 450°F for 20 minutes or more until light brown. You can use self-rising cornmeal and omit the baking powder, salt and baking soda.
