Cranberry Pecan Bars
1 c flour
2 tbs sugar
1/3 c margarine
1 c finely chopped pecans
1 c sugar
2 tbs flour
2 beaten eggs
2 tbs milk
1 tsp vanilla
1 c whole cranberry sauce
1/2 c coconut
Combine 1 c flour and 2 tbs sugar in a medium mixing bowl. Cut in
margarine with a pastry blender until the mixture resembles coarse
crumbs. Stir in half of the pecans. Press flour mixture into the
bottom of an ungreased 13x9x2-inch baking pan. Bake in a 350°
oven for 15 minutes.
Combine 1 c sugar and 2 tbs flour in a large mixing bowl. Stir in
eggs, milk, and vanilla. Fold in cranberry sauce, coconut and the
remaining pecans. Spread over partially baked crust.
Bake for 25 to 30 minutes or until top is golden. Cool slightly in
the pan on a wire rack. Cut into bars while warm. Cool completely
in pan.
