Makes 2 loaves
Strawberry Bread
3 c flour
2 c sugar
1 tbs cinnamon
1 tsp salt
1 tsp baking soda
3 eggs, beaten
1/3 c vegetable oil
1 4oz jar strained baby food pears
2 c mashed strawberries fresh or frozen (thawed & drained)
1/2 cup chopped pecans (optional)
Preheat oven to 350°. Spray two 8x4 loaf pans with vegetable oil
spray. In large bowl, mix together flour, sugar, cinnamon, salt, and
baking soda. Make a well in center of flour mixture; add eggs, oil,
pears, and strawberries. Stir until dry ingredients are thoroughly
moistened. Stir in nuts. Pour into prepared pans and bake at 350°
for 1 hour, or until bread tests done. Let it stand in pans 30 minutes
before removing to cool on rack.
