Carrot Cake
2 c sugar
2 c flour
2 tsp baking soda
1 tsp salt
1 1/2 c salad oil
4 eggs
3 c grated carrots
Sift together the first 5 ingredients. Add oil. Add eggs one at a
time. Bake in 13x9x2 inch pan at 325° for 40 to 45 minutes.
Frosting
3 1/2 c sifted confectioners sugar
1/2 c Oleo
1 8oz package cream cheese
1/2 tsp vanilla
1 c chopped nuts (pecans)
Cream together and spread on cake.
