Danish Pudding
1 c Oleo
1 3/4 c sugar
3 eggs
3 c flour
1 c boiling water
1/2 tsp salt
1/2 tsp baking soda
1 c dates
1 c nuts
1 tbs orange juice
1 tbs orange peel, grated
Pour boiling water over dates; set aside. Cream Oleo and sugar.
Add eggs one at a time. Sift flour, salt, and soda together. Add
dates alternately with flour. Add juice and nuts and rind; beat.
Bake in tube pan (greased and floured) at 350° for 1 hour.
Topping
1/2 c sugar
1 c orange juice
grated rind of 2 oranges
Spoon topping on while warm.
