Zucchini Cake

3 eggs, beaten
1 c vegetable oil
2 c sugar
2 tsp vanilla extract
2 c all-purpose flour
3 tsp ground cinnamon
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
2 c peeled, coarsely grated zucchini
powdered sugar glaze (optional)

Combine eggs, oil, sugar, and vanilla; mix well. Combine dry ingredients; add to oil mixture, mixing well. Stir in grated zucchini. Pour batter into a greased and floured 10-inch Bundt pan. Bake at 350° for 55 to 60 minutes. Allow to cool 20 minutes before removing from pan. If desired, spoon glaze over cake.

Powdered Sugar Glaze

1/2 c powdered sugar
2 tsp milk

Combine ingredients, mixing until smooth.
