Crunchy Cucumber Sticks
Use very large cucumbers
1st day: Peel and slice 7 pounds cucumbers. Soak for 24 hours in churn
in 2 gallons water and 2 cups lime.
2nd day: Rinse out of lime/water then soak for 6 hours in 2 gallons
water with 3oz powdered alum added. Rinse, then soak in clear water for
6 hours.
Make syrup:
1 qt white vinegar
6 lb sugar (about 12 cups)
2 qt water
1 tbs celery seed
3 tbs pickle spice
1 tbs salt
Bring to boil. Drain water from cucumbers then pour syrup over cucumbers
and let stand over night.
3rd day: Bring to boil. Cook until sticks are clear. Seal in jars.
