Serves 8

Broccoli with Cheese

4 boxes frozen chopped broccoli, cooked
1 c mayonnaise
2 eggs, beaten
1 small box Velveeta cheese
1 pack crushed Ritz crackers
3/4 stick butter, melted
1 can sliced water chestnuts
1 can cream of mushroom soup
salt and pepper to taste
paprika

Recipe can be prepared a day ahead for better taste. Spray baking dish with non-stick spray, or lightly grease with fat. Place broccoli in baking dish and add eggs, mushroom soup, mayonnaise, salt and pepper, water chestnuts, and butter. Mix and spread evenly. then add diced cheese in rows. Sprinkle top with paprika, cover with foil. Refrigerate overnight. Top with crushed crackers and put back in refrigerator for 1 hour. Cover with foil and bake for 30 minutes at 350° then remove foil and bake another 15 minutes.
