Creates Its Own Crust Coconut Pie
1/4 c margarine
1 c sugar
2 eggs
1 c milk
1/4 c self-rising flour
1/2 c (3 1/2 oz can) flaked coconut or 1 cup of fresh, shredded coconut.
Cream margarine and sugar together. Add eggs, one at a time, mixing well
after each addition. Add milk and flour, blending well. Fold in coconut.
Pour into a lightly greased, 9 inch pie pan. Bake at 350° F for 30 minutes or
until set. Cook in center of oven.
