Spicy Catfish Amandine
1/4 c butter or margarine, melted
3 tbs lemon juice
6 (6-ounce) catfish fillets
1 1/2 tsp Creole seasoning
1/2 c sliced almonds
Combine butter and lemon juice; dip each fillet in butter mixture,
and arrange in a 13x9x2-inch baking dish. Sprinkle fish with Creole
seasoning and almonds. Bake at 375° for 25 to 30 minutes or until
fish flakes easily when tested with a fork.
