Fried Apple Pies

4 medium-sized cooking apples, peeled and sliced
1/2 c sugar
1/4 tsp ground allspice
Pastry
vegetable oil

Pastry 1/3 c shortening
2 c self-rising flour
2/3 c cold water

Place apples in a saucepan with a small amount of water. Cook over medium heat, stirring occasionally, about 20 minutes or until tender. Drain well. Mash slightly, and measure 2 1/3 cups apples, reserving remaining apples for other uses. Combine apples, sugar, and allspice, stirring well. Set aside.
Divide pastry into 7 portions; roll each portion into a 7-inch circle. Spoon 1/3 cup apple mixture on half of each circle. Fold circles in half; press edges together with a fork dipped in flour. (Fry pies immediately after filling.)
Heat 1/2 inch of oil in a large skillet over medium-high heat. Cook pies, two at a time, until golden, turning once; drain on paper towels. Yield: 7 pies.
