Green Tomato Pie
6 or 7 medium green tomatoes (3 cups when chopped)
2 tbs lemon juice
1/2 tsp salt
3/4 tsp cinnamon
3/4 c sugar
2 tbs corn starch
top and bottom crust
1 tbs margarine
Cook chopped tomatoes, juice, and salt for 15 minutes. Mix sugar
and corn starch. Stir into tomato mix. Cook until clear. Add
margarine and cool - pour into crust. Cook for 40-50 minutes
at 425°.
