Lemon Pie #2
1 c sugar
3 tbs cornstarch
3 tbs flour
1 1/2 c boiling water
1/2 tsp salt
1/4 c lemon juice
3 eggs
grated rind of 1 lemon
Mix dry ingredients. Add boiling water. Cook til thick. Add beaten
yolks. Cook 2 minutes. Add lemon juice and rind. Cool. Pour in
baked crust. Cover with meringue. Bake at 325° for 15-25 minutes.
