Mary's Scones
1 lb 8 oz flour (6 cups)
1 1/2 oz baking powder (3 tbs)
6 oz unsalted butter (12 tbs - 1 1/2 stick)
4 oz sugar
3 eggs
2 tbs fresh rosemary (chopped)
6 oz mixed fruit (dried)
9 oz milk (1 1/8 cup)
Soak fruit overnight. Sift flour and baking powder into bowl and
rub in butter until fine crumbs. Stir in rosemary and fruit.
Make a well in center of dry stuff - add beaten egg. Add milk
until pliable dough. Turn out - knead. Roll out and cut 1/2 inch
thick. Glaze with sugar. Bake at 375° until golden brown.
