Milk Gravy

After frying chicken, bacon or ham, drain off all but around 1 tablespoon of grease.

Spoon flour into pan, stirring well to make a thick paste. Add more flour if all grease is not absorbed. Remove pan from heat and allow to cool a little. Slowly pour in sweet milk, stirring quickly to mix and to take up the browned bits on the bottom of the pan. Return pan to heat and keep stirring and adding milk until mixture reaches desired consistency.
Add freshly ground black pepper to taste.
