Quick and Easy Ratatouille
1 large onion, chopped
2 cloves garlic, minced
1/2 c olive oil
1 large eggplant, peeled and cubed
1 tsp salt
1/8 tsp pepper
1/4 tsp dried whole basil
1 large zucchini, sliced
2 medium-sized green peppers, cut into 1/2-inch pieces
6 unpeeled tomatoes, cut into 1/2-inch cubes
Sauté onion and garlic in oil until crisp-tender. Add eggplant,
salt, pepper, and basil; cover and cook 5 minutes over medium heat.
Stir in zucchini and green pepper; cover and cook 5 minutes. Add
tomatoes; cook until thoroughly heated. Serve hot or cold.
