Ratatouille
2 tbs olive oil
1 c sliced onion
1 tsp minced garlic
3 c diced egg plant
2 1/2 c sliced zucchini
3/4 c green pepper
2 c tomatoes - peeled and cubed
1 tsp sweet basil
salt and pepper
Heat oil, add onions and garlic. Stir fry 2 minutes.
Add eggplant, stir fry 2 minutes. Add layer of zucchinis, green
pepper, and tomatoes.
Sprinkle basil, salt, pepper over tomatoes. Cover and simmer 30 minutes
on low heat.
Uncover, stir gently and simmer 10 minutes.
