Vegetables For Kids
1 1/3 c shredded carrots
2/3 c sliced celery
1 tsp dried minced onion
6 eggs, divided
2 c cooked mashed potatoes, cooled
1 c shredded American cheese
1 c milk
1/2 tsp salt
Preheat oven to 375°. In a medium saucepan, bring about an inch
of water to a boil. Add carrots, celery and onion. Cover and cook
until tender, about 7 to 8 minutes. Drain well. Set aside.
In a medium bowl, beat 1 of the eggs. Stir in potatoes until well
blended. To form crust, spread over bottom and up sides of lightly
greased 9 inch pie plate. Place cooked vegetables and cheese in crust.
Beat together remaining eggs, milk and salt until well blended. Pour
over vegetables and cheese. Bake until knife inserted near center
comes out clean, about 45 minutes. Let stand 5 minutes before serving.
